saturday morning pancakes

Homemade breakfast on a Saturday morning is so comforting and wonderful, a great way to start a long weekend.

This morning, I used Bobby Flay's recipe for lemon ricotta pancakes (by the way, if you're ever in Portland-- Jam on Hawthorne has the BEST lemon ricotta pancakes) and made my own berry syrup by simmering some frozen berries, sugar and lemon juice together until it thickened. The pancakes were not as lemony as I had hoped, but they were extremely fluffy and the syrup was really yummy. Though I usually make pancakes using a boxed mix, these were so good and easy to make that I don't ever want to go back!

Hope your weekend is off to a lovely start.

Multnomah Falls

Zak's sister was visiting us this past weekend, so we made sure to take her to all our favorite Portland spots, and no visiting family member leaves us without seeing Multnomah Falls! Portland has so many great natural sites to see, and Multnomah Falls is one of my favorites. The drive along the Columbia river to get there is itself gorgeous, and the falls are just so breathtaking every time I see them. It's the tallest waterfall in Oregon and the third tallest in the world.

views from the bridge-- we were too weak too hike all the way to the top..

inside the visitor's center-- that dude built the bridge?

I've decided to start a collection of postcards! They sell them in every gift shop and they're always cheap. Hopefully someday I'll have a fat scrapbook full of them.

Hope you all had a good weekend!

mother's day

I know I'm a little late with this one, but I didn't want to post about mother's day this until I was sure my gift made it safely to my mother in the mail.

I crocheted her a little potted plant, inspired by this pattern (I didn't actually follow the pattern because it kept turning out too small, so I just sort of winged it!)

Also I added a face with rosy cheeks because that's kind of my deal.

I hope she liked it! And I hope you all had a lovely mother's day.

lately

Things I have been doing lately (aside from working way too hard on my final undergraduate research project):

Eating lots of salads (broccoli salad w/ a yogurt dressing instead of traditional mayo).

Being crafty. Ok so I am by no means an artist, as you can tell from the "painting" (if you can even call it that) above, which I made using an old shoe box. I generally classify myself as more of a "crafter", and also everything I do is sort of elementary school chic (including the way I dress and evidently the way I decorate my living space, see below), but I think it's cute so don't judge me, y'all! Plus there's something really nice about painting even if you're bad at it!

Decorating-- Clear cabinets + leftover wrapping paper. Only after I put it up did I realize how sesame street-esque it looks.

Enjoying the amazing weather.

Taking lots of walks downtown at all hours of the day.

important words

Something that is on my mind today:

"Every day, think as you wake up-- today I am fortunate to have woken up. I am alive, I have a precious human life, I am not going to waste it. I am going to use all of my energies to develop myself, to expand my heart out to others, to achieve enlightenment for the benefit of all beings. I am going to have kind thoughts towards others. I am not going to get angry or think badly about others. I am going to benefit others as much as I can."

        -The Dalai Lama

I have these words written on a poster in my bathroom so I can start each day reflecting on them. These words really move me, and I think regardless of whatever faith or spirituality you adhere to, there is a lot of truth in them. Today has been a long day, but with some powerful words, the right music, and some good food, everything falls into place.

I hope you all are having a beautiful day.
